Abstract
The utilisation of by-products from potato (peel and offcut) as a substrate for biotechnology processes enable high added value. The focus is on the extraction of the smoke flavour 4-Vinylguaiacol. The costs of substrate can be of considerable significance to the fermentation process. The costs of by-products as raw materials for biotechnological processes are often unknown. Therefore, a model approach was developed for the economic evaluation of potato by-products. Firstly, the profitability of potato by-products used as fodder as well as biogas substrate was calculated. Based on that, the raw material costs for the biotechnological utilisation were derived. The results give a recommendation for the economic use of potato by-products and an initial cost estimate for the biotechnological valorisation.
